This recipe from Picky Palate caught my eye when I saw it involves Junior Mints which are a new favourite of my Daughter’s. I decided to give this recipe a try to bring to our monthly potluck at work.

  • 1 stick unsalted butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 2 large eggs
  • 1/2 teaspoon pure vanilla extract
  • 1 1/2 cups Gold Medal all purpose flour
  • 1/2 cup cocoa powder (I used Hershey’s 100% Dark Chocolate, unsweetened)
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1 cup mini chocolate chips
  • 4 ounce box junior mints
