White Chocolate Lemon Truffles. These were pretty tasty...a refreshing bite. When I made them I added some fresh squeezed lemon juice so the 'dough' wasn't as firm, so my daughters helped me scoop a little bite onto plastic spoons and roll them in colorful decorating sugar. Ladies at the tea party enjoyed them!

  • 10 ounces high-quality white chocolate, chopped
  • 2 tablespoons unsalted butter
  • 6 tablespoons heavy cream
  • 1 teaspoon corn syrup
  • 1 drop lemon extract or pure lemon oil
  • the zest of half a lemon
  • white sanding sugar for coating
