Pumpkin Donut Muffins. Do not sub wheat flour and increase the baking time by at least 10 minutes. 1 tablespoon of butter was enough to top all the muffins

Ingredients

  • 1 and ¾ cups flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • ⅓ cup vegetable oil
  • ½ cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • ¾ cup pumpkin (puree, not the pie filling)
  • ½ cup milk
  • 3 tablespoons butter, melted
  • Cinnamon sugar
